Viceroy Smoked BBQ began in a backyard, driven by a simple obsession: finding the perfect balance between salt, pepper, and wood smoke.

What started as a weekend hobby for friends soon turned into a legendary local pit. We don't believe in shortcuts. No gas-assisted ovens, no pellet smokers.

Every slab of meat that leaves our kitchen has been tended to through the night until it reaches jiggly perfection.

Method 01: The Purist

Hot Water Bath (Recommended)

This gently brings the meat back to the exact state it left our smoker, retaining 100% of the rendered fat and moisture.

  • 1. Keep Sealed — Place the vacuum-sealed pouch directly into hot water.
  • 2. Submerge — Simmer gently at 70–75°C (160–170°F) for 20–30 minutes.
  • 3. Serve Hot — Slice, serve, and enjoy restaurant-quality moisture instantly.
