Viceroy Smoked BBQ began in a backyard, driven by a simple obsession: finding the perfect balance between salt, pepper, and wood smoke.

What started as a weekend hobby for friends soon turned into a legendary local pit. We don't believe in shortcuts. No gas-assisted ovens, no pellet smokers.

Every slab of meat that leaves our kitchen has been tended to through the night until it reaches jiggly perfection.

Our meats arrive vacuum-sealed to lock in the smoke and moisture. Restoring them to peak, melt-in-your-mouth perfection takes just minutes.

Method 01: The Purist

Hot Water Bath

The recommended method. This gently brings the meat back to the exact state it left our smoker, retaining 100% of the rendered fat and moisture.

  • Leave the meat inside the vacuum-sealed pouch.
  • Submerge in hot water (70–75°C / 160–170°F).
  • Let it heat for 20-30 minutes until hot throughout.

Method 02: The Maverick

Microwave & Crisp

The fastest way to eat. Minor moisture loss, but beautifully restores that signature peppery, dark bark on the outside of the meat.

  • Remove meat from the pouch and place on a plate.
  • Microwave on medium for 1-2 mins to warm the center.
  • Finish in an air fryer or oven toaster for 3-5 mins.
